Jr Mint Pie …. Yum!

This is a recipe I found years ago. I made it one Thanksgiving and it is now an expected part of the dinner. My big brothers (who are 49 and 51) have been known to walk away with the whole pie, that is until their kids chase them down!

Jr Mint Pie

11 1/4 ounces of Jr Mints

1 envelope geletin

1 tablespoon unsweetened cocoa

2 cups half and half

3 cups cool whip

1 9in graham cracker pie crust

place 1.6 oz Jr Mints in the freezer

In medium saucepan, stir together gelatin and cocoa. Add one cup of half and half. Stir over low heat until gelatin is dissovled, about 5 minutes.

Remove from heat. Add remaining Jr Mints. Stir until dissolved.

Stir in remaining one cup half and half.

Chille mixture. Stirring occasionaly. When mixture is slightly thickened (about 45 minutes) fold in 1 cup of cool whip.

Spoon into crust. Chill about 4 hours.

Chop frozen mints and fold into remaining cool whip. Gently spread over pie and chill until ready to serve.

Thanksgiving and Pecan Glazed Sweet Potatoes

Seems its that time of year. I have had several emails asking what is on my Thanksgiving menu and a recipe or two.

Here is what we will be serving for Thanksgiving

Turkey

Gravy

Cornbread stuffing

Mashed potatoes

Pecan glazed sweet potatoes

Succotash

Green bean casserole

Dinner rolls

Fruit salad

Hawaiian bread with spinach dip

White chocolate chunk pumpkin bread

And here is a recipe for one of the dishes,

    Pecan glazed sweet potatoes

29 oz Sugary cut sweet potatoes, drained

1/3 cup chopped pecans

1/3 cup coconut

1/3 cup firmyly packed brown sugar

3 tablespoons flour

3 tablespoons melted butter

Heat oven to 350.

Place drained sweet potatoes in ungreased 1 1/2 quart casserole dish.

In a small bowl combine the remaining ingredients. Mix well and sprinkle over sweet potatoes.

Bake at 350 for 35 to 40 minutes.

Found this recipe on the back of a yam can many years ago. Still have the label that I saved!

A no fuss cheesecake … almost

I just made this no-bake cheese cake and wanted to share. It was so easy. The first time around it was a bit fussy, when I followed the directions. The second I put my own touches on it and it was much easier and came out great. Give it a try.

Marble Cheesecake

Crust
8 oz plain granola
4 tbls butter
1 oz dark chocolate (I used Hershey’s special dark)

Crush up the granola in a plastic bag with a rolling pin.
Melt the butter and chocolate in the microwave on reduced power. Mix throughly. Mix in granola.
Line the bottom of a springform pan with baking parchment.
Pour in crust. Using a big spoon press the crust in.
Set aside.

Filling
1 1/4 cup heavy cream
1 pkg gelatin
3 tablespoons water
12 oz cream cheese
7 tablespoons of sugar
3/4 cup plain yogurt
6 oz melted white chocolate melted (not the bark stuff)
6 oz melted dark chocolate (again used Hershey’s Special Dark)

Whip the cream until it holds its shape set aside.
In a heat proof bowl sprinkle gelatin over water and allow to become spongy. Place over pan of hot water until gelatin is dissolved.
Mix the cream cheese and sugar throughly.
Beat in the yogurt.
Fold in the whipped cream.
Fold in the gelatin mixture.
Divide mixture in half.
Add white chocolate to one half and dark to the other. Fold in until mixed throughly.
Alternately drop spoonfuls over crust. Cut through with knife to marble.
Smooth the top with pastry knife.
Chill before serving.
